Groceries + Meal Prep

Hit up my spoooottt Trader Joe’s last night to grab some goodies and meal prep a lil bit. Usually I try to do that on Sunday’s but this weekend it just wasn’t happening. I ate ice cream and chocolate chip cookies instead. Sometimes when it’s Sunday and it’s Mother’s Day that’s just what happens okay people?!

This was yesterday’s grocery list (short because I already had a decent amount of stuff at home):

-          2 Avocados

-          Butter/Bib Lettuce

-          Frozen Broccoli

-          Eggs

-          Bananas

-          Hot sauce

-          Cashews

-          Greek Yogurt (even though I typically avoid dairy sometimes greek yogurt is too delicious/easy/protein-y to pass up as a snack)

-          Frozen pre-cooked Turkey meatballs (weren’t on my list but I saw them and I was like YEAAHHHH BABY)

-          Unsweetened almond milk (Califia Farms is the only brand I have found to date that doesn’t have Carrageenan as an ingredient, which has been linked to inflammation and digestive issues)

At home I already had a pack of chicken breast, a bag of sweet potatoes, frozen blueberries and other assorted fruits, frozen spinach, peanut butter, protein powder, chicken sausage, and about 1/3 of a pineapple, aka all the goodies I like to eat on a regular basis.

Meals:

I diced up 3 chicken breasts and cooked them in a large pan with olive oil until brown, shredded 4oz. of it into even smaller pieces and packed with a bit of diced pineapple and crumbled cashews. I packed 3 pieces of bib lettuce separately so I can put it all together today for lunch at work, topped with avocado and hot sauce (praise the lawd).

I also packed 4 turkey meatballs (precooked and seasoned), a sweet potato, and frozen broccoli and cauliflower mixed with garlic butter as a second meal, since I will be at the gym and then possibly at a hair appointment until late.

Greek yogurt and a banana and as many coffees as it takes to stay alive will be my snacks!
