Paleo Breakfast Casserole

I would like to preface this by saying I don't cook a lot and am not necessarily good at it so if you read something on here and think "hm that's weird I would never do it that way", feel free to adjust at your discretion.

Paleo Breakfast Casserole Ingredients: 

8 eggs

2 chicken sausage links

2 sweet potatoes

Broccoli to your preference 

 

Steps:

Preheat oven to 375

Poke holes in sweet potatoes and microwave for 2 minutes so that they start to cook. Remove and set aside to cool a little

Boil broccoli for about 5 minutes to soften (I used frozen broccoli so feel free to skip this step if yours is fresh or already cooked)

Dice up 2 trader joes sweet Italian chicken sausages (what I used, use whatever you like), dice up the sweet potatoes, set aside.

Whisk 8 eggs in a large bowl, pour into a greased baking pan, evenly distribute diced potatoes, sausage, and broccoli. Cook at 375 for 20ish minutes. 

Let cool, cut into 8 squares, pack in the fridge and heat when hungry! 

Suggestion: douse with hot sauce cause doooyyy
